The dinner already hiding in your fridge

You do not need a recipe with a shopping list attached. Here is how to cook from what you have, using the same handful of moves that work on almost anything.

Open your fridge right now and you probably have dinner in there. Not the dinner you planned, but a real one. The reason it does not feel that way is that most recipes start from the dish and work backwards to a shopping list, which is the wrong direction when it is already 6pm and you are hungry.

Cooking from what you have is a different skill, and it is mostly pattern, not talent. Almost every quick dinner is one of a few shapes, and once you can see the shape, the specific ingredients stop mattering so much.

Pick a shape, then fill it in

  • A grain, a protein, something green, and something sharp to finish. Rice, chicken, spinach, lemon. Or pasta, a can of beans, kale, chili and garlic.
  • Eggs plus whatever needs using. A frittata or fried rice absorbs half a fridge and asks no questions.
  • A soup: an onion, any vegetable, stock or water, and a starch to make it a meal. It is very hard to get wrong.

The move that saves most dinners

Something fatty and golden, something acidic to cut it, and salt until it tastes like a decision rather than an accident.

Fat, acid, salt. If a dish is boring, it is almost always missing one of the three.

Cook the thing that is about to turn first

The wilting herbs, the soft tomatoes, the spinach that has gone a little sad. These are not a problem, they are the plan. Soft tomatoes want to be roasted or cooked down. Tired greens want to be wilted into something hot. Herbs on their way out want to be blitzed with oil into a sauce. Waiting for them to be perfect is how they end up in the bin.

The best cooks are not the ones with the fullest fridges. They are the ones who use the fridge they have before it turns into a science project.
